The real challenge

The hardest part of dairy markets is not finding information.

It is knowing which information actually matters.

What we watch, every day

Where your value actually comes from

Your company was not built to predict dairy prices.

Most entrepreneurs create value somewhere else: in production, sales, innovation, logistics, customer relationships and people.

A dairy component should not dominate the agenda. But poorly managed, it can cost a great deal of money. A successful client is one who no longer spends every day worrying about the next purchase or sales price.

Our job is not to make dairy more important. It is to make it less distracting.

Why Hedge Fair Dairy exists

Large dairy companies have traders, analysts and procurement teams. You probably have none of that.

Yet you face exactly the same volatility. And one badly timed decision can erase months of hard work on the factory floor.

Hedge Fair Dairy closes that gap. You get senior market judgement, practical risk management and a personal sounding board — without building an internal market department, hiring an analyst, or paying for a platform you will never fully use.

In practice: we become your market desk. Two people on a call — not a department in a report.

How we build a view

Three sources. One judgement.

01

Data

Reliable fundamentals matter. But in dairy, official data often arrives one or two months after reality has already changed.

02

Spot market

OTC trading reveals today's tension and sentiment. In thin markets, however, a few players can temporarily move the whole picture.

03

Context

Conversations, observations and valuable hearsay complete the view — the intelligence that never appears in a report.

No single source tells the whole story. That is precisely the point.

What we actually do

Four things, done properly.

No packages, no dashboards you stop opening after three weeks. Four disciplines that work together, scaled to how exposed your business really is.

01

Market intelligence & outlook

Continuous reading of the European dairy complex — butter, cream, AMF, powders, cheese and whey — against milk supply, feed, weather, policy and export demand. You get what changed, what it means for your position, and what we are watching next.

02

Exposure & risk mapping

We translate your purchases, sales, contracts, pricing formulas and timing into one clear picture of where price actually hits your margin. Most companies find their real exposure is not where they assumed it was.

03

Hedging strategy & execution

Scenarios, levels, triggers and the balance between flexibility and protection — then execution through physical, OTC or exchange instruments. Only tools that are understandable and commercially useful. Nothing that needs a manual.

04

Sounding board on call

The quiet part that matters most. A direct line for the moment a buyer pushes, a seller pulls, or the market moves and you want a second opinion before you commit. Independent — and prepared to disagree with you.

Which of the four you need, and how deep it goes, depends entirely on how exposed you actually are. That is what the Risk Review is for.

How we work

A market view only becomes valuable when it leads to a better decision.

  1. 01

    Understand the exposure

Translate purchases, sales, contracts and timing into a clear commercial risk picture.

  2. 02

    Build context

Combine fundamentals, spot-market behaviour and intelligence from across the European dairy chain.

  3. 03

    Create a strategy

Agree scenarios, levels, triggers and the balance between flexibility and protection.

  4. 04

    Execute simply

Use physical, OTC or exchange tools only where they are understandable and commercially useful.

  5. 05

    Monitor and adjust

Keep the strategy aligned as the market and the underlying business evolve.

  6. 06

    Return attention to the business

The outcome is not a perfect market call. It is clarity, control and peace of mind.

Markets move quickly.

Your decisions do not have to.

What we believe

Better judgement beats better predictions.

Markets do not become less uncertain because somebody speaks with more confidence.

Good risk management starts by accepting uncertainty — and then making disciplined decisions anyway.

  1. 01

No single source tells the whole story.

  2. 02

Following the crowd is not a strategy.

  3. 03

    Emotional decisions create avoidable volatility.

  4. 04

    Absolute certainty does not exist.

  5. 05

    Discipline outperforms conviction without context.

Meet Wouter

I do not follow dairy markets because I have to.

I follow them because I am genuinely fascinated by how they work.

Put me at a family table and I will talk about building butter stocks. Put me at a bar with friends and I will probably end up discussing drought in France and its political implications for agriculture.

I am not driven by sympathy for one side of the chain. I am driven by a relentless interest in the dynamics behind supply, demand and price: weather, politics, milk production, feed, consumer behaviour, logistics and human emotion.

That curiosity became a profession. More than ten years as trader, broker, market analyst and risk manager — across physical and paper, buy side and sell side. Today I use it to help smaller dairy businesses avoid panic, resist herd behaviour and make disciplined decisions with the same quality of context larger players take for granted.

A deliberate fit

We are probably not the right partner for everyone.

We work with a maximum of twenty advisory clients. That is not a marketing device — it is the only way to stay genuinely close to each business.

Not for you if…

You want absolute certainty, guaranteed predictions, or someone who simply confirms what you already believe.

A strong fit if…

You value independence, honest debate, disciplined decisions, and a partner who is prepared to say “we do not know yet.”
